Where It All Began
JJ's Pizzeria started the way the best things do — around a table, with family. What began as weekend experiments in the back garden has grown into something we never expected: a mobile Neapolitan pizza experience that brings people together at celebrations across the country.
We're father and son. We argue about dough hydration, debate the perfect proving time, and we both know there's no rolling pin allowed anywhere near our pizzas. Some things are sacred.
The Neapolitan Way
We fell in love with Neapolitan pizza — the real thing. The 48-hour proved dough. The San Marzano tomatoes. The Fior di Latte. The blazing heat. The leopard-spotted char. There's nothing quite like it.
But what we love most is sharing it. Watching someone stretch dough for the first time. Seeing the surprise when their pizza emerges from the oven in 90 seconds, bubbling and perfect. That moment of pure joy — that's why we do this.
